PETER's CALAMARI and KING PRAWNS FANTASY

TIME : 45 MINUTES

 LEVEL : EASY

 For 2 persons you need:

 - 2 calamari 
- 300 grms king prawns
- 2 potatoes
- 1 onion
- 2 tomatoes 
- 15 olives
- 1 clove garlic
- 1 glass white wine
-  parsley
- salt and pepper
- olive oil



Just put every thing together in a creative way and cook 30 /40 minutes at 180° C. in the oven until calamari are tender. Serve with green salad and a glass of Prosecco wine.

RISOTTO ALLA MILANESE

Risotto alla Milanese is apparently is very simple recipe, but don't get fooled; to prepare, it requires a little extra attention. First of all for 2 persons you need: - 2 cups vialone nano or carnaroli rice - 1/2 small white onion - 3 tbl. spoons butter - 0,1 grams saffron - 1/2 liter meat stock/broth - grated  parmesan cheese - salt / pepper Prepare the stock and keep it warm. Keep some stock in one teacup and add the saffron.  Chop onion (small pieces). Melt 2 spoons of butter and add onion.  let onions simmer over low flame/heat, don't let them get golden brown. Add rice and toast it, together with the onions for about 2 minutes. Pay attention and don't burn the onions/butter. Add about half of the stock and cook 7/8 minutes, stirring once in a while. Add the remaining stock a bit at the time, stirring contineously until the rice is cooked "all dente". Then add stock with safffron, continue cooking and stirring until all liquid has evapor...

PORK IN MILK

For this typical italian recipe, you can use any pork cut. I used loin, so i can serve the pork sliced, which looks good. I used: - 1 kg. pork - 1 liter milk - 1 pc. garlic (chopped) - 2 tbl. sp. olive oil - rosemary, bay leaf, a few sage leafs and   - mint leaf - pepper + salt What to do: Place the pork cut in a baking tin and add all the milk and the other ingredients. Cook at 180° C. until the meat is tender, depending on the type of cut, let's say at least 30 min. Turn the meat at least 2 times, to brown evenly. When done, cool the meat and slice. Cover with milk sauce, and serve.         The sauce shouldn't be to liquid, if so, cook apart to evaporate some more liquid. Buon Appetito!
